These knives have a higher carbon content.  This means they will stay sharp longer, and are more durable if using them for frozen meats etc.  It may be that they will show rust if you do not dry them right away or store them in a very humid environment.  Do not store in a leather case.  Do not put your quality knives in the dishwasher as it will dull the blade and deteriorate the handle.  Leaving them in a sink full of water will do the same thing.  Wash and dry them immediately after use.
